Ingredients:

1 cup all-purpose flour

½ cup white whole-wheat flour

2 teaspoons ground ginger

1 ½ teaspoons ground cinnamon

1 teaspoon baking soda

¼ teaspoon ground cloves

¼ teaspoon salt

1 cup packed dark brown sugar

6 tablespoons unsalted butter, softened

1 large egg

2 tablespoons molasses

⅓ cup confectioners' sugar

 

Method:

1. In a medium bowl, whisk together all-purpose flour, whole-wheat flour, ginger, cinnamon, baking soda, cloves, and salt. Set this flavorful mix aside.

2. In a large mixing bowl, whip up a winning combo of brown sugar and butter with an electric mixer until it's a perfect blend. Then, introduce the egg and molasses to the mix. With the mixer on a low-speed dance, gradually add the flour concoction until they're a match made in baking heaven. Shape the dough into a 2.5 cm/1-inch thick disk, wrap it up in plastic, and let it chill in the fridge for about an hour.

3. Now, fire up the oven to a toasty 180ºC/350°F. Grease up two baking sheets, ensuring a smooth landing for your cookie creations.

4. Take a shallow dive into confectioners' sugar. Roll the dough into generous 2.5 cm/1-inch balls, then give them a liberating sugar coat. Spread your sweet creations about 5 cm/2 inches apart on the baking sheets. Into the oven they go, one sheet at a time, emerging as delightful crackle-topped cookies in a mere 10 to 12 minutes. Once they've dazzled your senses, let them cool on a wire rack.
